HAPPY TO BE HERE! For those of you who haven’t met me yet, I’d like to introduce myself. My name is Holly Beach. I moved to the Madison area in December 2004 with my husband Michael, three cats, two dogs, and two horses. For the past 11 years, I had owned and operated The Bread Baker Company in Rochester, Minnesota. More than six years ago, I started baking gluten-free breads and treats. The reason I started baking GF was due in part to stubbornness and in part to a passion for baking breads for EVERYONE to enjoy. When I found out how difficult it was to get GF ingredients in bulk, I thought to myself how hard it must be for a person with celiac disease to deal with obtaining safe and tasty foods on a day-to-day basis. From that point on, I was determined to make it work!
In August 2004, the former owners of The Bread Barn, Rob and Sue Wolfe, called to ask if I’d like to split a truckload of wheat. Wonderfully, that call turned into my buying the bakery from them on January 1, 2005. All I can say is that it was divine intervention that enabled me, in a four-month period, to sell the Rochester bakery and our home, find a new home and a stable for the horses, move three days after Christmas, and step into work January 2nd!
