Several years ago, my elderly mother was diagnosed with celiac disease. We’ve tried to find GF breads and pastries that she enjoyed and found very few that she liked. So I was thrilled when she told me that she LOVED the Breakfast Bundle that I ordered to be shipped to her home in Florida. I have tried them all and this is absolutely the best GF bread I have had. The cookies are extremely good as well. This bread smells and tastes like regular wheat bread. It is good untoasted or toasted. It is fresh. The others have a texture and taste comparable to styrofoam; this, well I wanted to stand on the front porch and yell to the world how wonderful this bread is. You must try it to believe it. I will highly recommend this to all I know, and cannot praise it enough!

Just wanted to say thank you. Your baked goods are delicious! I shared some of them with a friend who is also wheat intolerant. We LOVED everything. (She didn't get to try the brownie. I ate both of them the day I received them. Oh, well.) I really wanted to let you know that I actually ate an entire loaf of bread -- probably the first one since before I was diagnosed with celiac. I just haven't liked the bread -- until now! I ate the entire loaf of cinnamon swirl bread in a couple of days. I even used it as the bread for a hamburger. (Okay, cinnamon and hamburger is a strange combination, but it worked.) I will be placing another order soon. Thanks again for all of your hard work!

Oh yes, I know about the pies!  My brother's favorite pie is pumpkin, and when he found out we got them, he was SO happy!  He even let me try some, and it tasted exactly like a normal piece of pumpkin pie!  It was amazing! ... The look on his face when he sees a new dessert or food from your bakery that he hasn't had for a while because of this disease is priceless. I just want to let you know that you run a great bakery!

Thank you for baking such wonderful bread for those of us who have an allergy to gluten. I have been looking for good bread since realizing I was allergic to gluten almost two years ago. Your bread is incredible and I am back to being able to eat sandwiches and toast. This is why I want to share your bread with my niece in New York. She has been gluten-free for a number a years. Take a bite of a gluten-free blueberry muffin from the Silly Yak Bakery and Bread Barn, and you'll be hard pressed to distinguish it from a similar treat baked from wheat flour.

 

But to someone suffering from the immune system disorder celiac disease, the difference can be life-threatening.

 

Silly Yak Bakery and Bread Barn, at 7866 Mineral Point Road, opened early this year and took the place of the popular Madison bakery the Bread Barn.  Still featuring many of the same varieties of wheat bread and baked goods, the new owner, Holly Beach, retained the name, but added a play on words and comical logo that pokes fun of a serious ailment.

 

"This is a very scary disease, especially for small children," Beach said.  "So we said let's make it fun for people."

 

Those with celiac disease are sensitive to the proteins or gluten found in some grains -- namely wheat, barley, and rye.  Consumption of gluten by those with the disease can damage the intestine, making it difficult for the body to absorb nutrients.  The University of Chicago Celiac Disease Program estimates that 1 in 133 Americans has the disorder.

 

Beach, who previously owned a bakery in Rochester, Minn., now bakes gluten-free products every Sunday at the Madison bakery using grains such as rice, millet, sorghum, quinoa, and buckwheat.  She said fresh baking is important because many gluten-free breads are packaged with a two-year shelf life.

 

On Sundays at the Silly Yak, the production of wheat bread is suspended and the cooking areas are sterilized to keep gluten out of the mix.

 

"I train my people to think of wheat flour like a bacteria," Beach said.  "You don't want to cross-contaminate and make someone sick."

 

Gluten-free bread, cakes, cookies, brownies, and muffins are available fresh Sundays and sold frozen through the week.  Beach also ships products to customers as far away as California.

 

 

 

 

I just wanted to write you all and tell you how much I appreciate everything you guys do. One year ago I was diagnosed with celiac disease and without your awesome products, I would've gone insane! I've tried so many other bakeries and none of them can even compare to your stuff! It's so hard to comprehend that you can never have certain things ever again, but when you have amazingly wonderful substitutes, it makes it sooo much easier. I wish you so much success!

 

I wish I could attach a picture of the birthday cake I made from your cakes. It was sooo wonderful! Everyone loved it!

My mom is 85 years old and was diagnosed at least 20 years ago with celiac disease. She has lost 20 pounds in the past year and has said that she "just doesn't enjoy eating anymore". This is a woman who at age 84 was still riding a bike, has about 5 volunteer jobs, and is extremely active. Watching her just eating rice cakes every day and having to live on Immodium at times when she just tries to eat a "normal" meal was very sad to watch. She had tried some hideous rice bread in the past and as a senior citizen was horrified with the cost. I saw all the great reviews for your bread on the Gluten Solutions site, bought her 3 loaves, and she is hooked! You would have thought that I had given her a million dollars. She was so thrilled! Just to be able to eat a sandwich again or to have toast with her tea in the morning has been a total joy to her! I can't thank you enough for that!
